We do our best to source our ingredients from within 200 miles of our bakery in Troy, NY and we're always working to find more local food creators, curators and producers. Eating local helps connect people and strengthens the relationships between members of our community, and it delivers maximum nutrition and flavor to you! Trumansburg, NY

Stone Ground Organic Flours

The main source for our flour. FGF receives their grain from a small number of farms in the area and mills it into flour using the slow and cool method of stone grinding, preserving the natural oils, nutrients, and wild yeast & bacteria that we rely on to bring life into our sourdough. 

 

Oechsner Farms is the main farm supplying FGF. The soil in their 1200 acres was recently recognized by Cornell University as some of the healthiest in New York, thanks to the farm's dedication to crop rotation, cover cropping, and other regenerative farming practices. 

 

We source 80% of our wheat flour from Farmer Ground, including all the flour used in our sourdough and about 30% of the flour in our challah. We also source 100% of our rye grain (which we malt for use in our sourdough), whole rye flour (which we use in our 48-Hour Ancient Grain Sourdough), and whole wheat (used in our 100% Whole Wheat Sourdough)

A 100% employee-owned company and one of the oldest flour brands in the United States, with a history dating back to 1790. Based in Vermont, King Arthur is known for its high-quality, consistent flours and a strong commitment to baking education, sustainability, and community. 

At Anicca Bakery, we source about 20% of our flour from King Arthur, specifically the organic high-gluten content bread flour we use in our challah, which makes up about 70% of that bread's flour.

Oliver's is a family-owned farm co-op that raises their own chickens and supports their egg raising neighbors. Their chickens have ample outdoor space when seasonally appropriate, and are brought indoors during the coldest winter months. 100% of our eggs come from Oliver's. We use these eggs in our challah bread.

We source most of the ingredients above from Honest Weight Food Co-op; they arrange all the logistics of shipping and short-term storage, and we pick the things up when we're ready for them. We could not bake bread in the way we do without Honest Weight. The co-op is also where we got our start and where we sell most of our bread. Stop by and check the market out, it's the best grocery store we've ever been in (worldwide, we've traveled a bit), and such a wonderful organization to be associated with.
